Festive fish dishes for your Christmas table!

If you’re a seafood lover and haven’t decided what to serve your loved ones on Christmas Day, here are some delicious and easy to make fish dishes to make your guests extra jolly!

Lobster and summer fruit salad

Prep: 10 min     Ingredients: 13     Difficulty: Easy     Servings: 8

  • 3 baby cos lettuce, leaves separated, torn
  • 1 bunch rocket, trimmed
  • 1 large avocado
  • 1/2 medium red onion, thinly sliced
  • 1/2 cup small fresh mint leaves
  • 1/2 cup small fresh coriander leaves
  • 1 large mango, thinly sliced
  • 120g fresh raspberries
  • 2 cooked lobster tails, meat removed, sliced
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 2 teaspoons Dijon mustard
  • Pinch caster sugar

Method

Step 1

Arrange lettuce and rocket on a platter. Cut avocado in half and remove the stone. Peel and slice. Arrange over salad with onion, mint, coriander, mango slices and raspberries. Top with lobster meat.

Step 2

Whisk juice, oil, mustard and sugar together in a small bowl until combined. Drizzle over salad. Serve.

Step 3

Pair this dish with Houghton Chardonnay.

NOTE: If rocket is unavailable in bunches use 30g baby rocket leaves.

Tiger Prawn Pyramid

Ingredients: 5

  • Banana Leaf
  • polystyrene cone
  • double sided sticky tape
  • toothpicks
  • 6 kg Prawns

Method

1.On the first day, Cook prawns in salted boiling water for 3 to 5 mins

2.Refresh in ice & peel prawns.

3.Cover polystyrene cone with banana leaf using double sided sticky tape and pins

4.The next day, using tooth picks, poke prawns into polystyrene covered cone.

5.Serve with pickled ginger & wasabi cream
